Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt & black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh chopped parsley (for garnish)
Instructions
- Pat the chicken breasts dry and season both sides with salt and pepper.
- If desired, sear the chicken in olive oil until golden brown.
- In a Crock Pot, add the chicken broth, heavy cream, Parmesan cheese, minced garlic, sun-dried tomatoes, and crushed red pepper flakes. Stir until well combined.
- Place the seasoned chicken breasts in the sauce.
- Cook on low for 210-240 minutes until the internal temperature reaches 165°F.
- Garnish with fresh parsley and serve hot.
Notes
For extra flavor, you can marinate the chicken in Italian dressing for a few hours before cooking. If you want a thicker sauce, add a bit of cornstarch mixed with water in the last hour of cooking. Adjust red pepper flakes based on heat preference.
