Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt & black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (in oil, drained)
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh chopped parsley (for garnish)


Instructions

  1. Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and Italian seasoning.
  2. Sear the chicken in olive oil until golden brown (this step is optional but adds extra flavor).
  3. In the Crock Pot, add chicken broth, heavy cream, grated Parmesan cheese, minced garlic, sun-dried tomatoes, and crushed red pepper flakes. Stir until well combined.
  4. Place the seasoned chicken in the sauce, making sure it’s coated with the mixture.
  5. Cook on low for 210 to 240 minutes or until the internal temperature of the chicken reaches 165°F.
  6. Garnish with fresh chopped parsley and serve hot.

Notes

For extra flavor, consider adding a splash of white wine to the sauce. If you prefer a thicker sauce, mix a tablespoon of cornstarch with water and add it during the last hour of cooking.
