Ingredients
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Salt & black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh chopped parsley (for garnish)
Instructions
- Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and Italian seasoning.
- Sear the chicken in olive oil until golden brown (this step is optional but adds extra flavor).
- In the Crock Pot, add chicken broth, heavy cream, grated Parmesan cheese, minced garlic, sun-dried tomatoes, and crushed red pepper flakes. Stir until well combined.
- Place the seasoned chicken in the sauce, making sure it’s coated with the mixture.
- Cook on low for 210 to 240 minutes or until the internal temperature of the chicken reaches 165°F.
- Garnish with fresh chopped parsley and serve hot.
Notes
For extra flavor, consider adding a splash of white wine to the sauce. If you prefer a thicker sauce, mix a tablespoon of cornstarch with water and add it during the last hour of cooking.
