Description

A delightful dish combining tender chicken with a rich creamy tomato sauce, perfect for busy weeknights or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sundried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish


Instructions

  1. In a slow cooker, combine the sundried tomatoes, heavy cream, chicken broth, garlic, Italian seasoning, salt, and pepper.
  2. Add the chicken breasts, making sure they are well coated with the sauce.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
  4. Once done, shred the chicken in the sauce and stir.
  5. Serve over pasta, rice, or mashed potatoes, garnished with fresh basil or parsley.

Notes

Use high-quality sundried tomatoes for better flavor. Adjust the garlic and seasoning to taste. For a thicker sauce, add a cornstarch slurry towards the end of cooking.
