A delightful dish combining tender chicken with a rich creamy tomato sauce, perfect for busy weeknights or special occasions.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sundried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a slow cooker, combine the sundried tomatoes, heavy cream, chicken broth, garlic, Italian seasoning, salt, and pepper.
- Add the chicken breasts, making sure they are well coated with the sauce.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
- Once done, shred the chicken in the sauce and stir.
- Serve over pasta, rice, or mashed potatoes, garnished with fresh basil or parsley.
Notes
Use high-quality sundried tomatoes for better flavor. Adjust the garlic and seasoning to taste. For a thicker sauce, add a cornstarch slurry towards the end of cooking.
