Ingredients

- 1 cup cashews
- 1/2 cup sun-dried tomatoes
- 2 cloves garlic
- 1/4 cup nutritional yeast
- 2 tablespoons lemon juice
- 1 cup vegetable broth

Instructions
- Soak the cashews in water for at least 2 hours, then drain.
- Cook the pasta according to package instructions.
- In a blender, combine soaked cashews, sun-dried tomatoes, garlic, nutritional yeast, lemon juice, vegetable broth, salt, and pepper. Blend until smooth and creamy.
