A delightful dish featuring tender pork chops with savory mushrooms and fresh spinach in a rich and creamy sauce, perfect for family dinners or special occasions.


Ingredients

  • 4 pork chops
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 8 ounces cremini or white mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/4 teaspoon Italian seasoning
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 3/4 cup heavy/whipping cream
  • 2 cups fresh baby spinach (packed)


Instructions

  1. Take the pork chops out of the fridge 15-30 minutes before starting. Season with salt and pepper.
  2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Cook the pork chops for 3-5 minutes on each side until golden, then transfer them to a plate.
  3. In the same skillet, add the remaining butter, mushrooms, garlic, and Italian seasoning. Cook for 5-6 minutes.
  4. Sprinkle the flour over the mixture and cook for another minute.
  5. Add the chicken broth and lemon juice, cooking until it reduces by half.
  6. Stir in the cream, then return the pork to the skillet. Cook for 3-5 minutes until the sauce thickens and the pork reaches 145°F.
  7. Add the spinach and let it wilt. Taste the sauce and season if needed.
  8. Serve immediately.

Notes

Make sure to season the pork chops well for enhanced flavor. If you want more sauce, you can double the ingredients for the creamy mixture. Fresh spinach wilts quickly, so add it at the end to maintain its bright color and nutrition.
