Description
A hearty and flavorful low carb chicken casserole that is easy to make and great for meal prepping.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup cauliflower rice
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon olive oil (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chicken, broccoli, cauliflower rice, cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Optionally, heat olive oil in a skillet and sauté the mixture for a few minutes to enhance flavors.
- Transfer the mixture into a greased casserole dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes or until heated through and bubbly.
- Let cool slightly before serving.
Notes
For a lighter version, substitute cream cheese with Greek yogurt. Frozen vegetables can be used but should be thawed and drained.
