Description

A hearty and flavorful low carb chicken casserole that is easy to make and great for meal prepping.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower rice
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon olive oil (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, broccoli, cauliflower rice, cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. Optionally, heat olive oil in a skillet and sauté the mixture for a few minutes to enhance flavors.
  5. Transfer the mixture into a greased casserole dish and spread evenly.
  6. Bake in the preheated oven for 25-30 minutes or until heated through and bubbly.
  7. Let cool slightly before serving.

Notes

For a lighter version, substitute cream cheese with Greek yogurt. Frozen vegetables can be used but should be thawed and drained.
