A cozy and comforting dish featuring rigatoni pasta, rich creamy tomato sauce, and savory Italian sausage.
Ingredients
- 2 Tablespoons Extra-Virgin Olive Oil
- 1 large Onion (diced)
- 4 Garlic Cloves (minced)
- 1 1/2 lbs. Italian Sausage
- (2) 28-ounce cans Whole or Crushed Tomatoes
- 1/4 cup Fresh Basil, chopped (or 1 Tablespoon dried basil)
- 1/4 cup Fresh Oregano, chopped (or 1 Tablespoon dried oregano)
- 1 teaspoon Red Chili Flakes
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1 1/2 cups Heavy Cream
- 1 1/2 cups Grated Parmesan Cheese
- 1 lb. Rigatoni Pasta
Instructions
- Heat a large pot over medium heat and add the olive oil. Add the diced onion and cook for 7-8 minutes until softened.
- Add minced garlic and Italian sausage, breaking it apart with a spoon, and cook for another 7-8 minutes until browned.
- While the sausage cooks, fill another pot with water, bring to a boil, and salt it generously. Cook rigatoni for 9-11 minutes until al dente.
- Once the sausage is browned, add the canned tomatoes, basil, oregano, chili flakes, salt, and pepper. Bring to a boil, then simmer for 5-7 minutes.
- Pour in the heavy cream and 1 cup of Parmesan cheese, stirring and simmering for another 5-7 minutes.
- Drain the rigatoni and toss it into the sauce, stirring to coat.
- Serve immediately, garnished with the remaining Parmesan and fresh basil.
Notes
Sauté low and slow for enhanced flavor. Save pasta water for a creamier sauce.
