Description

A cozy and comforting dish featuring rigatoni pasta, rich creamy tomato sauce, and savory Italian sausage.


Ingredients

  • 2 Tablespoons Extra-Virgin Olive Oil
  • 1 large Onion (diced)
  • 4 Garlic Cloves (minced)
  • 1 1/2 lbs. Italian Sausage
  • (2) 28-ounce cans Whole or Crushed Tomatoes
  • 1/4 cup Fresh Basil, chopped (or 1 Tablespoon dried basil)
  • 1/4 cup Fresh Oregano, chopped (or 1 Tablespoon dried oregano)
  • 1 teaspoon Red Chili Flakes
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 1/2 cups Heavy Cream
  • 1 1/2 cups Grated Parmesan Cheese
  • 1 lb. Rigatoni Pasta


Instructions

  1. Heat a large pot over medium heat and add the olive oil. Add the diced onion and cook for 7-8 minutes until softened.
  2. Add minced garlic and Italian sausage, breaking it apart with a spoon, and cook for another 7-8 minutes until browned.
  3. While the sausage cooks, fill another pot with water, bring to a boil, and salt it generously. Cook rigatoni for 9-11 minutes until al dente.
  4. Once the sausage is browned, add the canned tomatoes, basil, oregano, chili flakes, salt, and pepper. Bring to a boil, then simmer for 5-7 minutes.
  5. Pour in the heavy cream and 1 cup of Parmesan cheese, stirring and simmering for another 5-7 minutes.
  6. Drain the rigatoni and toss it into the sauce, stirring to coat.
  7. Serve immediately, garnished with the remaining Parmesan and fresh basil.

Notes

Sauté low and slow for enhanced flavor. Save pasta water for a creamier sauce.
