Description

A lighter take on classic chicken Alfredo using Greek yogurt for a creamy, delicious sauce without the heavy calories.


Ingredients

  • 1 lb Boneless Chicken Breast (or thighs)
  • 1 cup Plain Greek Yogurt (full-fat or 2% recommended)
  • 3 cloves Fresh Garlic (minced or jarred)
  • 1/2 cup Parmesan Cheese (freshly grated)
  • 2 tbsp Olive Oil (or light butter)
  • Your favorite pasta (fettuccine recommended)
  • Salt and pepper to taste
  • A pinch of nutmeg
  • A splash of chicken broth or milk (optional)


Instructions

  1. Chop the chicken and season with salt and pepper. Sauté in olive oil until browned.
  2. Cook pasta in salted water according to package instructions.
  3. Add minced garlic to the same pan and stir for 30 seconds over low heat.
  4. Incorporate Greek yogurt and parmesan, whisking until smooth, adding chicken broth if needed.
  5. Return the chicken to the pan, toss with drained pasta, and mix well.
  6. Taste and adjust seasoning with more cheese or salt if desired.

Notes

For a vegetarian version, omit chicken and add sautéed mushrooms or zucchini.
