Description
A lighter take on classic chicken Alfredo using Greek yogurt for a creamy, delicious sauce without the heavy calories.
Ingredients
- 1 lb Boneless Chicken Breast (or thighs)
- 1 cup Plain Greek Yogurt (full-fat or 2% recommended)
- 3 cloves Fresh Garlic (minced or jarred)
- 1/2 cup Parmesan Cheese (freshly grated)
- 2 tbsp Olive Oil (or light butter)
- Your favorite pasta (fettuccine recommended)
- Salt and pepper to taste
- A pinch of nutmeg
- A splash of chicken broth or milk (optional)
Instructions
- Chop the chicken and season with salt and pepper. Sauté in olive oil until browned.
- Cook pasta in salted water according to package instructions.
- Add minced garlic to the same pan and stir for 30 seconds over low heat.
- Incorporate Greek yogurt and parmesan, whisking until smooth, adding chicken broth if needed.
- Return the chicken to the pan, toss with drained pasta, and mix well.
- Taste and adjust seasoning with more cheese or salt if desired.
Notes
For a vegetarian version, omit chicken and add sautéed mushrooms or zucchini.
