Ingredients
- 1 lb chicken breast, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 tablespoon Italian seasoning
- 2 cups lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Sauté onion and garlic in olive oil until translucent.
- Add diced chicken and cook until browned.
- Stir in diced tomatoes and chicken broth, then add Italian seasoning and bring to a boil.
- Add broken lasagna noodles and cook for about 10 minutes until tender.
- Mix in ricotta, mozzarella, and Parmesan cheese until melted and combined.
- Season with salt and pepper to taste.
