Ingredients

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon Italian seasoning
  • 2 cups lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Sauté onion and garlic in olive oil until translucent.
  2. Add diced chicken and cook until browned.
  3. Stir in diced tomatoes and chicken broth, then add Italian seasoning and bring to a boil.
  4. Add broken lasagna noodles and cook for about 10 minutes until tender.
  5. Mix in ricotta, mozzarella, and Parmesan cheese until melted and combined.
