Ingredients
- 1 lb chicken breast, cubed
- 2 tablespoons Cajun seasoning
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: chopped parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the cubed chicken to the skillet and season with Cajun seasoning. Sauté for about 6-8 minutes until browned and cooked through.
- Remove the chicken from the skillet and set aside.
- Add the rice to the same skillet and toast for 1-2 minutes.
- Pour in the chicken broth and bring to a boil, then reduce heat, cover, and simmer for about 15 minutes.
- Stir in the heavy cream and grated Parmesan cheese until melted and creamy.
- Return the cooked chicken to the skillet, stirring to combine.
- Season to taste with salt and pepper.
- Serve warm, garnished with chopped parsley if desired.
