Description

A delicious twist on traditional lasagna, this Creamy Alfredo Lasagna Soup offers comforting flavors in a warm soup format, perfect for chilly evenings.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 15 oz Alfredo sauce
  • 8 lasagna noodles, broken into pieces
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • Freshly chopped parsley, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground sausage and cook until browned, about 5-7 minutes. Drain excess fat if needed.
  3. Stir in the chopped onion and minced garlic. Cook until the onion is soft, about 3-4 minutes.
  4. Pour in the chicken broth and water. Bring to a boil.
  5. Stir in the Alfredo sauce and bring the mixture back to a gentle boil.
  6. Add the broken lasagna noodles, dried basil, oregano, crushed red pepper flakes, salt, and pepper. Reduce heat and simmer until the noodles are tender, about 10-12 minutes.
  7. Turn off the heat and mix in the shredded mozzarella, grated Parmesan, and ricotta cheese until melted and combined.
  8. Garnish with freshly chopped parsley before serving.

Notes

For a lighter version, use turkey sausage or a plant-based sausage. Feel free to add veggies like spinach or mushrooms for extra nutrition.
