A delicious twist on traditional lasagna, this Creamy Alfredo Lasagna Soup offers comforting flavors in a warm soup format, perfect for chilly evenings.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground Italian sausage
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 15 oz Alfredo sauce
- 8 lasagna noodles, broken into pieces
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup ricotta cheese
- Freshly chopped parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the ground sausage and cook until browned, about 5-7 minutes. Drain excess fat if needed.
- Stir in the chopped onion and minced garlic. Cook until the onion is soft, about 3-4 minutes.
- Pour in the chicken broth and water. Bring to a boil.
- Stir in the Alfredo sauce and bring the mixture back to a gentle boil.
- Add the broken lasagna noodles, dried basil, oregano, crushed red pepper flakes, salt, and pepper. Reduce heat and simmer until the noodles are tender, about 10-12 minutes.
- Turn off the heat and mix in the shredded mozzarella, grated Parmesan, and ricotta cheese until melted and combined.
- Garnish with freshly chopped parsley before serving.
Notes
For a lighter version, use turkey sausage or a plant-based sausage. Feel free to add veggies like spinach or mushrooms for extra nutrition.
