A delightful banana bread filled with creamy cheese, perfect for snacks or brunch.
Ingredients
- 1 large egg
- 1/2 cup light brown sugar (packed)
- 1/4 cup granulated sugar
- 1/4 cup liquid-state coconut oil (can substitute canola or vegetable)
- 1/4 cup sour cream (lite or Greek yogurt can be substituted)
- 2 teaspoons vanilla extract
- 1 cup mashed ripe bananas (about 2 large bananas)
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt (optional)
- 4 ounces brick-style cream cheese (softened; lite version is okay)
- 1/4 cup granulated sugar (for filling)
- 3 tablespoons all-purpose flour (for filling)
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9×5-inch loaf pan with floured cooking spray or grease and flour it; set aside.
- In a large bowl, whisk together the egg, light brown sugar, granulated sugar, coconut oil, sour cream, and vanilla extract until well combined. Add the mashed bananas and stir to incorporate.
- Fold in 1 cup of all-purpose flour, baking powder, baking soda, and optional salt until just combined.
- Pour about two-thirds of the batter into the prepared loaf pan, smoothing the top.
- In another bowl, combine the softened cream cheese, granulated sugar, and 3 tablespoons of flour. Mix until smooth.
- Pour the cream cheese filling over the banana bread batter evenly.
- Spoon the remainder of the banana bread batter gently over the filling, smoothing the top lightly.
- Bake for 48 to 50 minutes, or until golden brown, domed, and the center is set. Test with a toothpick to check doneness.
- Allow the bread to cool in the pan for 15 minutes before transferring to a wire rack to cool completely before slicing.
Notes
For best results, use overripe bananas and avoid overmixing the batter.
