Delightful scones with tart cranberries and sweet orange zest, perfect for breakfast or tea time.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh cranberries, chopped
- 1 tablespoon orange zest
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons orange juice (for glaze)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the cranberries and orange zest.
- In another bowl, whisk together the cream, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Turn the dough onto a floured surface, gently knead it a few times, and shape it into a disk about 1 inch thick.
- Cut into wedges and place on the baking sheet.
- Bake for 15-20 minutes or until golden brown.
- For the glaze, mix powdered sugar and orange juice until smooth and drizzle over cooled scones.
Notes
Best served warm, can be enjoyed plain or with butter, cream, or jam. Can be stored in an airtight container at room temperature for a day or two or frozen for up to three months.
