Ingredients
- 4 chicken breasts
- 1 cup fresh cranberries
- 1 orange (juice and zest)
- 1/2 cup chicken broth
- 1/4 cup brown sugar
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the cranberries, orange juice, orange zest, chicken broth, and brown sugar.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, and sear them until golden brown on both sides, about 4-5 minutes per side.
- Transfer the seared chicken to a baking dish and pour the cranberry-orange mixture over the top.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Marinate the chicken in the cranberry-orange mixture for a deeper flavor. For a thicker sauce, simmer the cranberry mixture before pouring it over the chicken.
