Description

Ingredients

  • 4 chicken breasts
  • 1 cup fresh cranberries
  • 1 orange (juice and zest)
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the cranberries, orange juice, orange zest, chicken broth, and brown sugar.
  3. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, and sear them until golden brown on both sides, about 4-5 minutes per side.
  4. Transfer the seared chicken to a baking dish and pour the cranberry-orange mixture over the top.
  5. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
