Description

A delightful dish combining tangy cranberries and sweet oranges with juicy chicken. Perfect for both busy weeknights and special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice
  • 1/2 cup brown sugar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon rosemary or thyme (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine cranberries, orange juice, brown sugar, salt, pepper, garlic powder, and herbs if using.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Season chicken breasts with salt and pepper, and sear them in the skillet until golden brown on both sides, about 4-5 minutes per side.
  5. Pour the cranberry-orange mixture over the chicken in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink inside.
  7. Serve hot, spooning the sauce over the chicken.

Notes

For added flavor, try balsamic vinegar in the sauce. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months. Reheat before serving.
