Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh or frozen cranberries
- 1 cup orange juice
- 1/2 cup brown sugar
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon rosemary or thyme (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine cranberries, orange juice, brown sugar, salt, pepper, garlic powder, and herbs if using.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Season chicken breasts with salt and pepper, and sear them in the skillet until golden brown on both sides, about 4-5 minutes per side.
- Pour the cranberry-orange mixture over the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink inside.
- Serve hot, spooning the sauce over the chicken.
Notes
For added flavor, try balsamic vinegar in the sauce. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months. Reheat before serving.
