Ingredients
- 20 oz cheese tortellini (Fresh or refrigerated varieties yield the best texture and taste.)
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Start by cooking the tortellini according to the package instructions. Drain and set aside.
- Season the steak with salt, black pepper, garlic powder, and smoked paprika.
- Heat the olive oil in a large skillet over medium-high heat. Add the steak and sear it for about 4-5 minutes on each side or until it reaches your desired doneness. Remove the steak and let it rest before slicing into bite-sized pieces.
- In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and whole milk, stirring to combine. Bring the mixture to a gentle simmer.
- Add the Parmesan cheese gradually, stirring until it melts and the sauce becomes creamy.
- Mix in the cooked tortellini and sliced steak, tossing everything together to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with parsley and red pepper flakes, if using.
Notes
Use fresh tortellini for the best flavor and texture. Don’t overcook the steak; it should be juicy and tender. Adjust garlic and spices according to taste. If the sauce is too thick, add more milk or cream.
