Description
Cozy and comforting baked potatoes stuffed with creamy ranch-infused chicken filling, topped with melted cheese and crispy bacon.
Ingredients
- 4 large baking potatoes
- 2 cups shredded cooked chicken
- 1 packet ranch seasoning mix
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C). Scrub the baking potatoes and poke holes in them with a fork. Bake for 45-60 minutes until tender.
- While the potatoes are baking, mix shredded chicken with ranch seasoning, cream cheese, and half of the cheddar cheese in a large bowl. Season with salt and pepper.
- Let the potatoes cool slightly, cut them in half lengthwise, and scoop out some of the flesh, leaving enough to keep the skin sturdy.
- Mix the scooped potato flesh with the chicken mixture and fold in the crumbled bacon.
- Spoon the chicken mixture back into the potato skins, packing it in well.
- Sprinkle the remaining cheddar cheese over each stuffed potato and bake for another 15-20 minutes until cheese is melted and bubbly.
- Let cool for a couple of minutes, then garnish with fresh chives or sliced green onions before serving.
Notes
Use rotisserie chicken to save time. You can substitute ranch seasoning with taco seasoning for a different flavor.
