Description

Cozy and comforting baked potatoes stuffed with creamy ranch-infused chicken filling, topped with melted cheese and crispy bacon.


Ingredients

  • 4 large baking potatoes
  • 2 cups shredded cooked chicken
  • 1 packet ranch seasoning mix
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Chives or green onions for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the baking potatoes and poke holes in them with a fork. Bake for 45-60 minutes until tender.
  2. While the potatoes are baking, mix shredded chicken with ranch seasoning, cream cheese, and half of the cheddar cheese in a large bowl. Season with salt and pepper.
  3. Let the potatoes cool slightly, cut them in half lengthwise, and scoop out some of the flesh, leaving enough to keep the skin sturdy.
  4. Mix the scooped potato flesh with the chicken mixture and fold in the crumbled bacon.
  5. Spoon the chicken mixture back into the potato skins, packing it in well.
  6. Sprinkle the remaining cheddar cheese over each stuffed potato and bake for another 15-20 minutes until cheese is melted and bubbly.
  7. Let cool for a couple of minutes, then garnish with fresh chives or sliced green onions before serving.

Notes

Use rotisserie chicken to save time. You can substitute ranch seasoning with taco seasoning for a different flavor.
