A comforting and delicious weeknight dinner featuring tender chicken, cowboy butter, and vibrant vegetables.


Ingredients

  • 8 oz linguine
  • 2 tbsp cowboy butter
  • 2 chicken breasts, diced
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.
  2. In a large skillet, melt the cowboy butter over medium heat.
  3. Add the diced chicken and cook until browned and cooked through, about 6-8 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the cherry tomatoes and spinach to the skillet, cooking until the spinach wilts and the tomatoes are softened.
  6. Toss in the cooked linguine, adding Parmesan cheese and mixing until well combined.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

For added flavor, ensure chicken is golden brown. Fresh spinach enhances texture. Add red pepper flakes for heat.
