Ingredients
- 8 oz linguine
- 2 tbsp cowboy butter
- 2 chicken breasts, diced
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the linguine according to package instructions. Drain and set aside.
- In a large skillet, melt the cowboy butter over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 6-8 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the cherry tomatoes and spinach to the skillet, cooking until the spinach wilts and the tomatoes are softened.
- Toss in the cooked linguine, adding Parmesan cheese and mixing until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, ensure chicken is golden brown. Fresh spinach enhances texture. Add red pepper flakes for heat.
