Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup whole milk
- 2 large eggs
- 1/2 teaspoon vanilla extract
- For the streusel topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, cold and cut into small pieces
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In a separate bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- In a small bowl, combine the streusel ingredients and mix until it resembles coarse crumbs.
- Spoon the muffin batter into the muffin tin, filling each cup about 2/3 full.
- Sprinkle the streusel mixture over the muffin batter.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These muffins freeze well; store in an airtight container for up to 3 months.
