Description

Soft and tender coffee cake muffins topped with a crunchy streusel, perfect for a cozy breakfast or snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. In a small bowl, combine the streusel ingredients and mix until it resembles coarse crumbs.
  6. Spoon the muffin batter into the muffin tin, filling each cup about 2/3 full.
  7. Sprinkle the streusel mixture over the muffin batter.
  8. Bake for 18-22 minutes, or until a toothpick comes out clean.
  9. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins freeze well; store in an airtight container for up to 3 months.
