Description

A delicious twist on traditional banana bread, combining rich sweetness with a crumbly topping. Perfect for breakfast, a snack, or dessert.


Ingredients

  • 3-4 medium or large bananas
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 cup flour (for crumb topping)
  • 1 cup brown sugar (for crumb topping)
  • 6 Tbsp cold butter (for crumb topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 8×4 inch pans.
  2. In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs and beat until well mixed.
  5. Sift in the flour, baking soda, and salt to the wet ingredients, stirring until just combined.
  6. Add the sour cream and stir until smooth.
  7. Pour in the mashed banana mixture and mix until fully combined.
  8. In a small bowl, combine 1 cup of flour, 1 cup of brown sugar, and 6 Tbsp of cold butter for the crumb topping. Use a fork or your hands to mix until the topping looks crumbly.
  9. Sprinkle the crumb topping evenly over the banana bread batter in the pans.
  10. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Serve warm, topped with butter or cream cheese. Store covered at room temperature for up to 3 days, or refrigerate for up to a week.
