Description
A delicious twist on traditional banana bread, combining rich sweetness with a crumbly topping. Perfect for breakfast, a snack, or dessert.
Ingredients
- 3-4 medium or large bananas
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 Tbsp sour cream (or Greek yogurt)
- 1 cup flour (for crumb topping)
- 1 cup brown sugar (for crumb topping)
- 6 Tbsp cold butter (for crumb topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease two 8×4 inch pans.
- In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the eggs and beat until well mixed.
- Sift in the flour, baking soda, and salt to the wet ingredients, stirring until just combined.
- Add the sour cream and stir until smooth.
- Pour in the mashed banana mixture and mix until fully combined.
- In a small bowl, combine 1 cup of flour, 1 cup of brown sugar, and 6 Tbsp of cold butter for the crumb topping. Use a fork or your hands to mix until the topping looks crumbly.
- Sprinkle the crumb topping evenly over the banana bread batter in the pans.
- Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Serve warm, topped with butter or cream cheese. Store covered at room temperature for up to 3 days, or refrigerate for up to a week.
