Description

Delightful cookies combining rich chocolate flavors with fresh strawberries, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature preferred
  • 2 tablespoons neutral cooking oil (avocado, canola, or vegetable oil)
  • 1 1/2 teaspoons vanilla extract
  • 3 1/2 cups cake flour
  • 2/3 cup Dutch cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon table salt
  • 8 tablespoons unsalted butter (for filling)
  • 4 tablespoons freeze dried strawberry powder
  • 1/8 teaspoon table salt (for filling)
  • 1 1/3 cups powdered sugar
  • 1 cup semi sweet or couverture chocolate
  • 1/4 cup heavy cream


Instructions

  1. In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
  2. Add in eggs, cooking oil, and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together cake flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until combined.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. For the filling, beat the unsalted butter until creamy, then mix in strawberry powder and salt. Gradually add powdered sugar until well combined.
  7. Scoop filling onto a baking sheet and freeze for at least 15 minutes. Preheat the oven to 350°F (175°C).
  8. Once the dough has chilled and filling is frozen, scoop dough, create a crater, fill it with the frozen filling, and roll into a ball.
  9. Place on a prepared baking sheet and space cookies at least 2 inches apart.
  10. Bake for 11-12 minutes. Let cooled cookies sit for 10 minutes before transferring to a cooling rack.
  11. For the chocolate topping, melt chocolate and heavy cream together, whisk until smooth.
  12. Once cookies are cooled, top with chocolate ganache and allow it to harden before serving.

Notes

Best enjoyed fresh, but can be stored in an airtight container for 3-5 days. Freeze for longer storage.
