Description

A quick and comforting Chicken Lo Mein with tender chicken, vibrant vegetables, and silky noodles, perfect for a satisfying weeknight meal.


Ingredients

  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Gather all ingredients and chop your vegetables into bite-sized pieces for even cooking.
  2. Cook the Lo Mein noodles according to package instructions until they are al dente. Drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add sesame oil and sauté the chicken until golden brown, about 6-8 minutes. Remove and set aside.
  4. In the same pan, stir-fry the chopped vegetables for 3-4 minutes until tender but still crisp.
  5. Return the chicken to the skillet, add the noodles, soy sauce, sesame oil, and minced garlic. Toss to combine and heat through for 1 minute.
  6. Serve hot, garnished with additional green onions or sesame seeds.

Notes

Use fresh noodles for best results. For a vegetarian option, substitute tofu for chicken.
