Description

A hearty and flavorful cheesy potato breakfast casserole that feeds a crowd, perfect for brunch or gatherings.


Ingredients

  • 6 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup milk
  • 6 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the diced potatoes, onion, bell pepper, salt, pepper, garlic powder, and paprika. Mix until the potatoes are evenly coated.
  3. In another bowl, whisk together the eggs and milk until smooth.
  4. Layer half of the potato mixture in a greased 9×13 inch baking dish. Sprinkle half of the cheese on top.
  5. Pour half of the egg mixture over the potatoes.
  6. Repeat the layers with the remaining ingredients.
  7. Cover with plastic wrap and refrigerate overnight (optional).
  8. Bake uncovered for 45-50 minutes until the center is set and golden brown.
  9. Let it cool for a few minutes before serving.

Notes

For enhanced flavor, consider adding cooked sausage or experimenting with different cheeses.
