A hearty and flavorful cheesy potato breakfast casserole that feeds a crowd, perfect for brunch or gatherings.
Ingredients
- 6 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 cup milk
- 6 large eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the diced potatoes, onion, bell pepper, salt, pepper, garlic powder, and paprika. Mix until the potatoes are evenly coated.
- In another bowl, whisk together the eggs and milk until smooth.
- Layer half of the potato mixture in a greased 9×13 inch baking dish. Sprinkle half of the cheese on top.
- Pour half of the egg mixture over the potatoes.
- Repeat the layers with the remaining ingredients.
- Cover with plastic wrap and refrigerate overnight (optional).
- Bake uncovered for 45-50 minutes until the center is set and golden brown.
- Let it cool for a few minutes before serving.
Notes
For enhanced flavor, consider adding cooked sausage or experimenting with different cheeses.
