Ingredients
- 4 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced vegetables (such as bell peppers, spinach, or onions)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil to prevent sticking.
- In a mixing bowl, whisk together the eggs, cottage cheese, and your choice of shredded cheese until well combined.
- Add in the diced vegetables and season with salt and pepper. Mix until all ingredients are evenly distributed.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full to allow for rising as they bake.
- Bake for 20-25 minutes, or until the egg bites are set and the tops are slightly golden brown.
- Allow them to cool in the tin for a few minutes before carefully removing the bites. Serve warm or store in the refrigerator for meal prep.
