Description

A comforting and flavorful pasta dish infused with taco seasonings, perfect for quick weeknight dinners.


Ingredients

  • 1 tbsp Olive Oil
  • 1 ½ lbs Ground Beef
  • 1 large Yellow Onion, diced
  • 2-3 cloves Garlic, minced
  • 1 (10oz) can Diced Tomatoes with Green Chilies (Rotel), undrained
  • 1 (15oz) can Tomato Sauce
  • 1 (15oz) can Black Beans, rinsed & drained
  • 1 (15oz) can Sweet Corn, drained
  • 4 cups Beef Broth
  • 1 cup Water
  • 12 oz Elbow Macaroni (or small pasta)
  • 1 (1.25oz) packet Taco Seasoning
  • 1 tsp Ground Cumin
  • ½ tsp Chili Powder
  • ½ tsp Smoked Paprika
  • ¼ tsp Cayenne Pepper (optional)
  • 1 ½ cups Shredded Colby Jack Cheese
  • ½ cup Shredded Sharp Cheddar Cheese
  • Salt & Freshly Ground Black Pepper, to taste


Instructions

  1. Prepare Ingredients: Gather and prep all ingredients for cooking.
  2. Brown Beef: Heat olive oil in a Dutch oven, add ground beef, and cook until browned. Drain excess fat.
  3. Sauté Aromatics: Add diced onion and cook until softened; add minced garlic and cook for an additional minute.
  4. Add Tomato Base and Spices: Stir in diced tomatoes, tomato sauce, taco seasoning, cumin, chili powder, smoked paprika, and cayenne pepper. Simmer for 2-3 minutes.
  5. Add Beans, Corn, and Liquids: Stir in black beans, sweet corn, beef broth, and water. Bring to a gentle boil.
  6. Cook Pasta: Add elbow macaroni, cover, and simmer for 10-12 minutes until pasta is al dente.
  7. Stir in Cheese: Remove from heat and stir in shredded cheeses until melted.
  8. Season and Serve: Season to taste, let rest for 5 minutes, and serve with optional toppings.

Notes

Pair with a side salad or tortilla chips for a complete meal. Adjust spice levels according to taste.
