A creamy and comforting cauliflower soup infused with aromatic cumin and turmeric, perfect for chilly winter days.
Ingredients
- 1 head cauliflower, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/4 cup fresh dill, chopped
- 4 cups vegetable broth
- 1 cup whole milk
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Sauté the diced onion and minced garlic until translucent and fragrant, about 3-5 minutes.
- Add chopped cauliflower, cumin, turmeric, paprika, salt, and pepper. Stir and cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 20 minutes.
- Once the cauliflower is tender, blend the soup until smooth with an immersion blender.
- Stir in the whole milk and fresh dill, adjust the seasoning, and serve hot.
