Description

A delightful twist on traditional chili with bold Cajun flavors, creamy texture, and hearty ingredients, perfect for family dinners.


Ingredients

  • 1 lb. white chicken meat, diced
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup cream or sour cream
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and minced garlic; sauté until translucent.
  3. Stir in the diced chicken and andouille sausage. Cook until chicken is browned.
  4. Add the shrimp and cook for another 2-3 minutes.
  5. Mix in the white beans, chicken broth, and Cajun seasoning. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Stir in the cream or sour cream, and cook for another 5 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot in bowls.

Notes

For extra flavor, consider browning the sausage more before adding the chicken. Adjust spiciness with hot sauce or more Cajun seasoning.
