Ingredients
- 1 lb. white chicken meat, diced
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup cream or sour cream
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion and minced garlic; sauté until translucent.
- Stir in the diced chicken and andouille sausage. Cook until chicken is browned.
- Add the shrimp and cook for another 2-3 minutes.
- Mix in the white beans, chicken broth, and Cajun seasoning. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Stir in the cream or sour cream, and cook for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot in bowls.
Notes
For extra flavor, consider browning the sausage more before adding the chicken. Adjust spiciness with hot sauce or more Cajun seasoning.
