Description

A delightful dish that combines sweet and savory flavors, featuring tender chicken caramelized in brown sugar and pineapple.


Ingredients

  • 1 lb boneless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)


Instructions

  1. In a bowl, mix together brown sugar, soy sauce, garlic, and ginger to create the marinade.
  2. Place the chicken in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Heat olive oil in a skillet over medium-high heat. Remove chicken from the marinade and sear in the skillet for about 3-4 minutes per side until browned.
  5. Transfer the chicken to a baking dish and pour the remaining marinade and pineapple chunks over it.
  6. Bake in the oven for 25-30 minutes or until the chicken is cooked through.
  7. Garnish with green onions if desired and serve.

Notes

For extra flavor, marinate the chicken for a few hours or overnight. Adjust the sweetness to your taste by adding more or less brown sugar.
