A delightful dish that combines sweet and savory flavors, featuring tender chicken caramelized in brown sugar and pineapple.
Ingredients
- 1 lb boneless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a bowl, mix together brown sugar, soy sauce, garlic, and ginger to create the marinade.
- Place the chicken in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium-high heat. Remove chicken from the marinade and sear in the skillet for about 3-4 minutes per side until browned.
- Transfer the chicken to a baking dish and pour the remaining marinade and pineapple chunks over it.
- Bake in the oven for 25-30 minutes or until the chicken is cooked through.
- Garnish with green onions if desired and serve.
Notes
For extra flavor, marinate the chicken for a few hours or overnight. Adjust the sweetness to your taste by adding more or less brown sugar.
