Description
A creamy and comforting Broccoli Cheddar Soup that warms the soul on chilly days.
Ingredients
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup chicken or vegetable broth
- 1 cup milk (or a non-dairy alternative)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: cooked chicken for added protein
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, stirring for about 3–5 minutes until softened.
- Toss in the broccoli florets and pour in the broth. Bring to a gentle boil, then simmer for about 10-15 minutes until broccoli is tender.
- Add the milk and cheese to the pot, stirring until the cheese is melted and combined.
- Using an immersion blender, carefully puree the soup to your desired consistency.
- Season with salt and pepper to taste.
- If desired, stir in any cooked chicken and heat through before serving.
Notes
Don’t overcook the broccoli. Use fresh ingredients for the best flavor.
