Description

A creamy and comforting Broccoli Cheddar Soup that warms the soul on chilly days.


Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 1 cup milk (or a non-dairy alternative)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: cooked chicken for added protein


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, stirring for about 3–5 minutes until softened.
  2. Toss in the broccoli florets and pour in the broth. Bring to a gentle boil, then simmer for about 10-15 minutes until broccoli is tender.
  3. Add the milk and cheese to the pot, stirring until the cheese is melted and combined.
  4. Using an immersion blender, carefully puree the soup to your desired consistency.
  5. Season with salt and pepper to taste.
  6. If desired, stir in any cooked chicken and heat through before serving.

Notes

Don’t overcook the broccoli. Use fresh ingredients for the best flavor.
