Ingredients
- 1 can black beans, drained and rinsed
- 1 cup rice (long-grain white or brown)
- 1 sausage (smoked or andouille), sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken broth
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat, using about 1 tablespoon to coat the bottom.
- Add chopped onion and garlic, sauté until translucent (about 5-7 minutes).
- Add sausage slices and cook until browned (about 3-4 minutes).
- Stir in the rice, black beans, cumin, paprika, salt, and pepper, combining thoroughly for a minute.
- Pour in the chicken broth and bring to a boil, stirring a couple of times.
- Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
- Fluff with a fork and serve.
