Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup rice (long-grain white or brown)
  • 1 sausage (smoked or andouille), sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken broth
  • Olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat, using about 1 tablespoon to coat the bottom.
  2. Add chopped onion and garlic, sauté until translucent (about 5-7 minutes).
  3. Add sausage slices and cook until browned (about 3-4 minutes).
  4. Stir in the rice, black beans, cumin, paprika, salt, and pepper, combining thoroughly for a minute.
  5. Pour in the chicken broth and bring to a boil, stirring a couple of times.
  6. Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
  7. Fluff with a fork and serve.
