Description

Delicious Mexican Birria Tacos that combine rich, savory flavors of braised beef with crispy tortillas and served with flavorful dipping sauce consomé.


Ingredients

  • 2 lbs beef (chuck roast or brisket)
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 4 cloves garlic
  • 1 onion, chopped
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 4 cups beef broth
  • 1 cup Oaxacan cheese (or mozzarella), shredded
  • Corn tortillas
  • Chopped onions, cilantro, and lime for garnish


Instructions

  1. Toast the dried chilies in a dry skillet until fragrant. Soak them in hot water for 10 minutes, then blend them with garlic, onion, cumin, oregano, and salt.
  2. In a large pot, add the beef and pour the blended sauce over it. Add the beef broth and bring to a boil.
  3. Reduce heat and let simmer for about 120-180 minutes until the beef is tender.
  4. Shred the beef and mix it back into the broth.
  5. Heat tortillas in a skillet, then add the beef mixture and top with cheese. Fold tortillas and fry until crispy and golden.
  6. Serve Birria Tacos with consomé, diced onions, cilantro, and lime on the side.

Notes

For more depth of flavor, marinate the beef in the blended sauce overnight. For added heat, include jalapeños in the blending step.
