A creamy and hearty twist on traditional chili, packed with flavor and perfect for chilly days.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground chicken or turkey
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
- Add ground chicken or turkey and cook until browned.
- Stir in white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper.
- Bring to a simmer and cook for 20 minutes.
- Serve hot, topped with cheese and cilantro if desired.
Notes
For a thicker chili, mash some of the white beans before adding them. To add more spice, include diced jalapeños or cayenne pepper.
