Description

A creamy and hearty twist on traditional chili, packed with flavor and perfect for chilly days.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground chicken or turkey
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
  2. Add ground chicken or turkey and cook until browned.
  3. Stir in white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper.
  4. Bring to a simmer and cook for 20 minutes.
  5. Serve hot, topped with cheese and cilantro if desired.

Notes

For a thicker chili, mash some of the white beans before adding them. To add more spice, include diced jalapeños or cayenne pepper.
