Ingredients

  • 1 lb boneless, skinless chicken breast (sliced or cubed)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • ½ cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • ½ lb (8 oz) penne pasta
  • Fresh basil, chopped (for garnish)


Instructions

  1. Season your chicken with salt and pepper. In a large skillet, heat the olive oil over medium-high heat and sear the chicken until browned and cooked through, about 5–7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Sprinkle in the flour and whisk for 1–2 minutes to create a roux.
  3. Slowly pour in the chicken broth, followed by the heavy cream. Whisk until the sauce thickens, then mix in the parmesan cheese until melted.
  4. Stir in the sun-dried tomatoes, smoked paprika, and Italian seasoning. Let it simmer to meld the flavors.
  5. Return the chicken to the skillet and let it simmer in the sauce. Cook the penne pasta al dente according to package directions. Drain and toss the pasta into the sauce until well-coated.
  6. Top with freshly chopped basil and serve immediately.

Notes

Be patient when searing the chicken for a golden crust. Always whisk the sauce to ensure a smooth texture.
