Description

A comforting and flavorful one-pot lasagna soup, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef (or Italian sausage)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups uncooked pasta (like rotini or fusilli)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Grated Parmesan cheese for topping


Instructions

  1. In a large pot, brown the ground beef over medium heat until it’s no longer pink. Drain excess grease.
  2. Add the chopped onion and garlic to the pot and cook until the onion becomes soft.
  3. Pour in the broth and crushed tomatoes. Stir to combine.
  4. Add the uncooked pasta, oregano, basil, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 10-12 minutes, or until the pasta is tender.
  5. Stir in the spinach and cook for another 2 minutes until wilted.
  6. Remove from heat and swirl in the ricotta cheese.
  7. Serve hot, topped with mozzarella and grated Parmesan cheese.

Notes

For extra flavor, consider adding Italian seasoning or red pepper flakes for some heat. Try using ground turkey for a lighter version. If you prefer a creamier soup, stir in heavy cream before serving. Don’t overcook the pasta; it should be al dente.
