Description

A comforting bowl of hearty lasagna soup that captures all the beloved flavors of traditional lasagna in a warm, cozy dish.


Ingredients

  • 1 pound ground beef or Italian sausage (or a mix)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish (optional)


Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the ground beef or sausage, breaking it apart with a spatula. Cook for about 5-7 minutes, until browned and no longer pink. Drain excess fat if necessary.
  2. Stir in the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
  3. Pour in crushed tomatoes, broth, dried basil, dried oregano, and season with salt and pepper. Bring to a gentle simmer, letting flavors meld for about 5 minutes.
  4. Add broken lasagna noodles into the soup. Stir well and cook for an additional 8-10 minutes, or until noodles are tender, stirring occasionally.
  5. Lower the heat and gently stir in ricotta cheese until incorporated and slightly melted. Top with shredded mozzarella cheese, cover, and let it sit for about 2-3 minutes until cheese is gooey and melty.
  6. Remove from heat, garnish with fresh basil if desired. Ladle into bowls and enjoy!
