Ingredients
- 1 pound ground beef or Italian sausage (or a mix)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 lasagna noodles, broken into bite-sized pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the ground beef or sausage, breaking it apart with a spatula. Cook for about 5-7 minutes, until browned and no longer pink. Drain excess fat if necessary.
- Stir in the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
- Pour in crushed tomatoes, broth, dried basil, dried oregano, and season with salt and pepper. Bring to a gentle simmer, letting flavors meld for about 5 minutes.
- Add broken lasagna noodles into the soup. Stir well and cook for an additional 8-10 minutes, or until noodles are tender, stirring occasionally.
- Lower the heat and gently stir in ricotta cheese until incorporated and slightly melted. Top with shredded mozzarella cheese, cover, and let it sit for about 2-3 minutes until cheese is gooey and melty.
- Remove from heat, garnish with fresh basil if desired. Ladle into bowls and enjoy!
