Description

Crispy chicken sliders with a spicy, creamy sauce, perfect for parties or family dinners.


Ingredients

  • 1 1/2 pounds chicken breast, butterflied and pounded thin
  • 12 lettuce leaves, rinsed and patted dry
  • 2 cups panko bread crumbs
  • 1 (12 count) package Hawaiian rolls
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon hot sauce, such as Tabasco
  • 1 teaspoon rice wine vinegar
  • 1 to 2 cups avocado oil or other vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne
  • 1 teaspoon ground coriander
  • 1/4 cup water
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper


Instructions

  1. Preheat the oil in a large pot or deep fryer to 350°F (175°C).
  2. Set up a breading station with three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs.
  3. Season the chicken breasts with salt, pepper, garlic powder, cayenne, and ground coriander.
  4. Dredge each chicken breast in flour, dip in egg, and then coat with panko breadcrumbs.
  5. Fry the chicken pieces in the hot oil until golden brown and cooked through, about 4-5 minutes.
  6. Remove the chicken and drain on paper towels.
  7. In a bowl, mix together mayonnaise, sweet chili sauce, hot sauce, and rice vinegar.
  8. Slice the Hawaiian rolls and spread a layer of the sauce on each side.
  9. Place fried chicken on each roll, top with lettuce, and serve immediately.

Notes

Serve warm and enjoy with fries or a fresh salad. Store leftovers separately in airtight containers.
