Description

A delicious and customizable chicken bowl featuring tender chicken, colorful veggies, and a creamy, spicy sauce served over rice.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice


Instructions

  1. Cook rice according to package instructions and set aside.
  2. Cut chicken breast into bite-sized pieces and season with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat and sauté chicken until golden brown and cooked through, about 6-8 minutes.
  4. Mix sauce ingredients in a small bowl; adjust sriracha and honey to taste.
  5. Toss mixed veggies into the skillet with the chicken and cook for an additional 2-3 minutes until slightly tender.
  6. Remove the skillet from heat and pour sauce over chicken and veggies, stirring to coat.
  7. Serve bang bang chicken over rice, garnishing with extra sriracha or chopped green onions if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat before serving.
