Ingredients
- 4 Pears
- 2 tablespoons Butter (or vegan butter)
- 0.5 cup Mixed Fresh Berries
- 0.5 cup Walnuts (roughly chopped; or sunflower/pumpkin seeds for nut-free)
- 0.25 cup Blue Cheese (crumbled; or goat cheese/vegan cheese)
- 2 tablespoons Honey (can substitute maple syrup)
- Fresh Thyme Sprigs (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash your pears and slice them vertically in half, removing the cores.
- Place the halved pears cut-side up in an oven-safe baking dish.
- Dollop the butter on each pear half and drizzle honey over the top.
- Scatter the mixed berries around and on top of the pears, followed by the walnuts.
- Top each pear half with crumbled blue cheese.
- Slide the baking dish into the oven and bake for about 20-25 minutes.
- When tender and caramelized, garnish with fresh thyme and serve warm.
