Description
A warm, cheesy dish with eggs, feta, roasted cherry tomatoes, and vibrant spinach, perfect for brunch or busy mornings.
Ingredients
- 2 large eggs
- 1 block of feta cheese
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, place the block of feta cheese in the center. Surround it with the halved cherry tomatoes and chopped spinach.
- Drizzle with olive oil and season with salt and pepper.
- Bake in the oven for about 20 minutes or until the feta is soft and the tomatoes are roasted.
- Remove from the oven and make two small wells using a spoon.
- Crack an egg into each well.
- Return to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your liking.
- Garnish with fresh herbs if desired, and serve warm.
