Description

A warm, cheesy dish with eggs, feta, roasted cherry tomatoes, and vibrant spinach, perfect for brunch or busy mornings.


Ingredients

  • 2 large eggs
  • 1 block of feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place the block of feta cheese in the center. Surround it with the halved cherry tomatoes and chopped spinach.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Bake in the oven for about 20 minutes or until the feta is soft and the tomatoes are roasted.
  5. Remove from the oven and make two small wells using a spoon.
  6. Crack an egg into each well.
  7. Return to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your liking.
  8. Garnish with fresh herbs if desired, and serve warm.
