Description

A comforting brunch dish combining creamy feta, juicy tomatoes, and nutritious spinach baked with eggs.


Ingredients

  • 200g Feta Cheese
  • 4 Fresh Eggs
  • 2 Tomatoes (Chopped)
  • 100g Spinach (Fresh or Frozen)
  • 2 tbsp Olive Oil
  • Salt to taste
  • Black Pepper to taste
  • 1 clove Garlic (Optional)
  • Fresh Herbs for Garnish (Optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the feta cheese in the center of a baking dish, surrounded by the chopped tomatoes and spinach.
  3. Drizzle olive oil and season with salt and pepper. Add garlic if using.
  4. Bake for 20-25 minutes until the cheese is softened and golden.
  5. Crack the eggs gently on top of the baked mixture.
  6. Bake again for 10-12 minutes or until the eggs are cooked to your liking.
  7. Garnish with fresh herbs and serve warm.

Notes

Quality ingredients like good feta and fresh vegetables make a big difference. Use a cast iron skillet for a beautiful presentation.
