A comforting brunch dish combining creamy feta, juicy tomatoes, and nutritious spinach baked with eggs.
Ingredients
- 200g Feta Cheese
- 4 Fresh Eggs
- 2 Tomatoes (Chopped)
- 100g Spinach (Fresh or Frozen)
- 2 tbsp Olive Oil
- Salt to taste
- Black Pepper to taste
- 1 clove Garlic (Optional)
- Fresh Herbs for Garnish (Optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the feta cheese in the center of a baking dish, surrounded by the chopped tomatoes and spinach.
- Drizzle olive oil and season with salt and pepper. Add garlic if using.
- Bake for 20-25 minutes until the cheese is softened and golden.
- Crack the eggs gently on top of the baked mixture.
- Bake again for 10-12 minutes or until the eggs are cooked to your liking.
- Garnish with fresh herbs and serve warm.
Notes
Quality ingredients like good feta and fresh vegetables make a big difference. Use a cast iron skillet for a beautiful presentation.
