Description

This hearty and flavorful chili warms you up on cold days with its blend of beef short rib, Mexican chorizo, and bold spices.


Ingredients

  • 1 lb Beef short rib
  • 8 oz Mexican chorizo
  • 28 oz Fire-roasted tomatoes
  • 1 Onion, chopped
  • 4 cloves Garlic, minced
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 can Kidney beans, drained
  • 2 cups Beef broth


Instructions

  1. In a large pot, brown the beef short rib and chorizo over medium heat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Stir in fire-roasted tomatoes, chili powder, cumin, salt, and pepper.
  4. Pour in beef broth and add kidney beans.
  5. Bring to a simmer, cover, and cook on low heat for at least 60 minutes, stirring occasionally.
  6. Adjust seasoning as needed, then serve hot.
