This hearty and flavorful chili warms you up on cold days with its blend of beef short rib, Mexican chorizo, and bold spices.
Ingredients
- 1 lb Beef short rib
- 8 oz Mexican chorizo
- 28 oz Fire-roasted tomatoes
- 1 Onion, chopped
- 4 cloves Garlic, minced
- 2 tbsp Chili powder
- 1 tsp Cumin
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 can Kidney beans, drained
- 2 cups Beef broth
Instructions
- In a large pot, brown the beef short rib and chorizo over medium heat.
- Add chopped onion and minced garlic, cooking until softened.
- Stir in fire-roasted tomatoes, chili powder, cumin, salt, and pepper.
- Pour in beef broth and add kidney beans.
- Bring to a simmer, cover, and cook on low heat for at least 60 minutes, stirring occasionally.
- Adjust seasoning as needed, then serve hot.
