A warm and comforting soup combining the flavors of classic lasagna with creamy goodness, perfect for busy weeknights.
Ingredients
- 1 lb ground Italian sausage (or ground turkey/chicken)
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 8 lasagna noodles, broken into pieces
- 1 tsp Italian seasoning
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 2 cups fresh spinach (optional)
- Fresh parsley or basil, chopped (for garnish)
- 1 cup shredded mozzarella cheese (optional, for topping)
Instructions
- Heat olive oil in a large pot and brown the sausage. Remove from pot and set aside.
- Sauté the diced onion until soft. Add minced garlic and cook for another minute.
- Pour in chicken broth and simmer. Stir in Italian seasoning, salt, and pepper.
- Add broken lasagna noodles and cook until tender (10-12 minutes).
- Lower heat, stir in cream cheese and heavy cream until smooth.
- Return cooked sausage to the pot and mix in grated Parmesan cheese.
- If using spinach, add now and stir until wilted.
- Serve hot, topped with parsley, basil, and mozzarella cheese if desired.
Notes
For a richer flavor, consider using homemade chicken broth. You can also substitute the ground sausage with your choice of protein.
