Description

A warm and comforting soup combining the flavors of classic lasagna with creamy goodness, perfect for busy weeknights.


Ingredients

  • 1 lb ground Italian sausage (or ground turkey/chicken)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 8 lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 cups fresh spinach (optional)
  • Fresh parsley or basil, chopped (for garnish)
  • 1 cup shredded mozzarella cheese (optional, for topping)


Instructions

  1. Heat olive oil in a large pot and brown the sausage. Remove from pot and set aside.
  2. Sauté the diced onion until soft. Add minced garlic and cook for another minute.
  3. Pour in chicken broth and simmer. Stir in Italian seasoning, salt, and pepper.
  4. Add broken lasagna noodles and cook until tender (10-12 minutes).
  5. Lower heat, stir in cream cheese and heavy cream until smooth.
  6. Return cooked sausage to the pot and mix in grated Parmesan cheese.
  7. If using spinach, add now and stir until wilted.
  8. Serve hot, topped with parsley, basil, and mozzarella cheese if desired.

Notes

For a richer flavor, consider using homemade chicken broth. You can also substitute the ground sausage with your choice of protein.
